Chicken Paprikash

Ingredients: 4 chicken breasts with skin, paprika, red pepper flakes, mushrooms, scallions, sour cream, salt and garlic

In a Dutch oven, cook for 45 minutes and turnover halfway through.

Tasted delicious!


Curried Beef Kebabs

Ingredients: beef sirloin, scallions, curry powder, salt, garlic (minced) and canola oil.

Mix all in a bowl. Putting the meat and scallions on the skewers is time consuming. Curry makes your fingers yellow and the smell tends to linger. I made sure to wash my hands thoroughly.

I used this portable grill and depending on the cut of the meat, I had thin sliced beef and folded it, to make it thick to go through the skewers. Next time I’ll use thicker cut beef. I turned it over every minute until it was the way I wanted it cooked.

Bacon Wrapped Chicken Thighs

I had skinless thighs and saw a recipe for them wrapped in bacon.

Very simple and easy. Besides the bacon and thighs, salt and pepper is required.

Season the thighs, depending on the size of thighs, wrap in one or two bacon slices. Put on a cookie sheet with foil and sprayed with cooking spray.

Cook for 20 minutes, turn over and cook for 20 minutes, then turn over and cook one more time for 20 minutes. Bacon should be crispy.

My first time cooking this and it was delicious. I made homemade thousand island dressing and spread it on top.

Creamy Lemon Butter Chicken Spaghetti

If you love Butter Chicken (like I do) this recipe is perfect. 

What You’ll Need:

3 chicken breasts

2 tbsp oil

1/2 tsp salt

1/4 tsp pepper

2 tbsp butter

1 white onion, diced

2 garlic clove minced

1/4 cup tomato paste

1 tsp paprika

1/2 tsp cayenne

1 cup cream

2 cups spinach

1/2 cup grated parmesan, plus extra to garnish

Juice of 1 lemon

1/4 cup pasta water

1 tbsp parsley, finely chopped

500 g spaghetti, cooked

How You Make It:
Heat oil in a large non-stick pan, over medium heat. Add chicken breasts and sear both sides with salt and pepper until golden brown and cooked. Remove, set aside and slice.
Add butter to the pan and melt. Add onions stirring and cooking until soft. Add tomato paste, paprika and cayenne, stir and cook for 5 minutes until oil starts to separate.

Stir in cream and spinach; bring to a simmer and add sliced chicken, parmesan, parsley and juice of one lemon.

Stir in cooked spaghetti until coated.

Serve with additional parmesan cheese.


Balsamic pork chops with spicy bacon glaze

Hubby found this recipe and requested that I make it.

Ingredients are: 

4 pork chops, balsamic vinegar, Worcestershire sauce, olive oil, honey, brown sugar, steak seasoning, 6 strips of bacon. 

I opted out the hot sauce and substituted Italian seasoning for the steak seasoning.

In a bag you mix the balsamic vinegar, brown sugar, Italian seasoning and the pork chops. Marinate for 2 to 4 hours. 

In a pan, Chop the bacon 🥓 and cook until it’s crispy. Drain the grease and put aside (you will need it to fry the pork chops). Add Worcestershire sauce, honey with the bacon and mix until the sauce becomes slightly thick. Pour into a bowl and put aside.

Cook pork chops in a grilled pan for 3 minutes on each side, until brown do not over cook.

Pour the bacon sauce over the pork chop and dinner is now served.

Homemade Pizza

The first time I tried to do this, it turned out wrong.

I know better! I rolled out the pre made pizza dough to the size I wanted. As the oven was pre heating at 425 degrees. I put the pizza stone in for a few minutes then let it cool down for a bit.

I prepared the toppings. Cooked mild Italian sausage (crumbled in pieces), garlic, mushroom and spinach in a pan.

Made sure the pizza stone was warm and sprayed cooking spray all over so the dough doesn’t stick. Lay the dough on top, brushed olive oil only on the corners of the crust. Spread marinara sauce, sprinkled mozzarella cheese, the sausage, garlic, mushrooms and spinach.

Cooked it in the oven for about 15 minutes or when the crust is not too brown.
