Slice mushrooms, asparagus cut in small pieces and slice carrots. Cook in a wok until tender. Then throw in the shrimp and mix together until tender.
I would serve it with noodles but I’m watching my carb intake.
Preheat oven to 350 degrees. Cover a cookie sheet with tin foil and spray with cooking spray.
Mix 1/4 teaspoons of garlic salt, onion salt, dried oregano, thyme, paprika and ground black pepper in a small container with a lid and shake ingredients.
Arrange the thighs in prepared baking sheet. Sprinkle spice mixture liberally over thighs.
Bake chicken for an hour or until skin is crispy and no longer pink at the bone and juices run clear.
Served with deep fried shrimp and string beans. This was my first time trying this chicken thigh recipe. It was delicious!!
A friend of mine shared this recipe on her Facebook page, so I decided to make this for dinner.
The zucchini has to be cut in thin slices. I didn’t have one of this slicing devices so I did the best I could with whatever knife I had. Also, yellow pepper had to be sliced thinly as well.
Put zucchini, yellow pepper and shrimp (without its shells) in a big bowl. One teaspoon each of salt and pepper. Half a teaspoon of garlic powder. Two tablespoons of olive oil. It needed 2 tablespoons of lime juice and I didn’t have it so I put 1 tblsp of orange juice. Mix thoroughly. Spread mixture on to a increased cookie sheet pan. Cook for 8 minutes.
Boil green beans in a pot for 10 minutes until tender. In a pan, cook chopped mushrooms. Once done, put aside.
Boil 2 cups of water once it starts to boil, break the uncooked spaghetti in half (desired amount) and cook for 9 minutes on medium heat (stir occasionally). Drain the pasta rinse with cold water.
Remove shell from shrimp. Pat dry with paper towel. Warm up pan with 1 tablespoon of olive oil on medium heat, after few minutes throw in some chopped garlic. Cook for a minute then toss in the shrimp. Cook shrimp until it is no longer translucent and has an orange color (no longer than 5 minutes).
Add the cooked pasta, mushrooms, string beans and 2 cups of pasta sauce. Stir, cover and cook for 5 minutes. Stir again before serving. Top it off with parmesan cheese.
